Caramelised Pineapple - Recipes
Serves 4-6
40g butter
50g (1/4 cup, firmly packed) brown sugar
1 small pineapple, peeled, halved, cut into thick slices
1 tablespoon water
Vanilla ice-cream, to serve
1. Place the butter and sugar in a large non-stick frying pan and cook, stirring frequently, over a high the butter melts.
2. Add pineapple slices to the pan, reduce heat to medium and cook, turning occasionally,
for 10-15 minutes, or until the pineapple is slightly browned and the sauce has thickened. Remove from the heat add the water and stir to combine. Serve warm with vanilla ice-cream.
Variation:
Caramelised Pineapple With Rum, add 1 tablespoon dark rum to the pan just before removing from the heat.
